Sunday Morning Pancakes

Fluffy and tender made-from-scratch pancakes are not hard or time consuming!

Ingredients:

  • 2 cups all-purpose flour
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 2 Tbsp sugar
  • 1/2 tsp cinnamon
  • 2 cups milk
  • 1 large egg
  • 1 tsp vanilla
  • 2 Tbsp vegetable oil

Directions:

Pre-heat griddle to 350 degrees.

In a large bowl, mix flour, baking powder, salt, sugar, and cinnamon until well combined. Make a well in the flour.img_4369

In a another bowl or a large measuring cup, add milk, egg, vanilla, and oil. Whisk until well combined.

When griddle is hot, add liquid mixture to flour mixture. Mix with a fork until just combined. Batter will not be completely smooth, there should still be lumps. Do not over mix!!

I use a 1/3 cup measuring cup to scoop out batter and drop onto griddle. Do  not place them too close or they will be hard to flip.

Let cook for about 3 minutes. Pancakes should fluff up, bubbles will start forming on the tops, and bottoms should be nicely golden.

Carefully, flip pancakes and cook for another minute.

I like to place cooked pancakes on a cookie rack while the others cook. If you place them right on a plate and keep adding pancakes on top the bottom ones will start to get soggy.

Serve with butter and warm maple syrup.
