When you crave banana bread but only have 1 banana, try these delicious cookies chock full of nuts and sweet cinnamon chips (I hoard bags of these in the fall when they are easy to find, if you can’t find them now use mini chocolate chips).
- 3/4 cup (1 1/2 sticks)butter, softened
- 3/4 cup packed brown sugar
- 2 large eggs
- 1 ripe banana, mashed with fork
- 1 tsp vanilla
- 2 cups all-purpose flour
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 cup chopped walnuts
- 1 bag (10 oz) cinnamon chips (or substitute 1 1/2 cups of mini chocolate chips)
Preheat oven to 350 degrees.
Beat softened butter and brown sugar for 2 minutes, until fluffy. Add eggs and beat until combined. Add mashed banana and vanilla and beat until combined.
In a separate bowl, whisk flour, baking soda, and salt.
Add flour mixture to banana mixture and beat on low speed until just blended.
Stir in nuts and chips.
Drop rounded tablespoons of dough onto lined baking sheets, 2 inches apart.
Bake for about 12 minutes.
Let cool for 1 minute and then move to wire rack to cool completely.
