Chocolate Chip Cookies

These are my favorite cookies and they are super easy and quick to make, especially if you keep some chopped walnuts on hand (I buy a large bag of walnuts and grind them in batches in a nut chopper and store them in a plastic container).

  • 2 cups unbleached all-purpose flour
  • 1/4 cup whole wheat flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup  granulated sugar
  • 3/4 cup packed light brown sugar
  • 1 tsp vanilla extract
  • 2  large eggs, lightly beaten
  • 2 cups semi-sweet chocolate morsels
  • 1 cup chopped walnuts

Preheat oven to 375 degrees.

In a bowl, whisk together flours, baking soda and salt. In the bowl of a mixer, beat butter, granulated sugar, brown sugar, and vanilla extract until creamy. Add eggs, and beat well. Gradually beat in flour mixture. Stir in chocolate morsels and walnuts. Drop by rounded tablespoon onto ungreased baking sheets.

Bake for 9 to 11 minutes or until golden. Cool on baking sheets for 2 minutes, then remove to wire racks to cool completely.
