Super quick and easy mini chocolate cookie cups filled with vanilla buttercream frosting. I was doing a Valentine’s Day treat, but you could use this for any occasion by changing the muffin liners and colored sprinkles.
- 1 Box of Chocolate Cake Mix (I used Devil’s Food Cake)
- 1 Stick of unsalted butter, softened
- 1 egg, lightly beaten
- Frosting (you could use store bought or try my Favorite Vanilla Frosting recipe below)
Preheat oven to 350 degrees.
Put mini muffin liners in mini muffin pan.
In the bowl of a mixer, beat the butter until creamy. Add the cake mix and the egg and beat on low until combined and then on medium for a minute or two. Dough should be thick and form together.
Scoop out a Tbsp of dough and form into a ball and place it in the lined mini muffin pan. Bake for 12-14 minutes.
Let sit in pan for 1 minute and then use the back of a teaspoon to press down in the middle of each cookie cup, making a well.
Remove cookie cups from the pan and let cool completely on a wire rack.
Pipe frosting into each cookie well. Decorate with sprinkles if so desired. 🙂
Favorite Vanilla Frosting Recipe:
- 1/4 cup unsalted butter (1/2 a stick), softened
- 1/4 cup non-hydrogenated shortening
- 1 3/4 cup powdered sugar
- 3/4 tsp vanilla extract
- 2 Tbsp milk
In the bowl of a mixer, combine butter and shortening. Beat for 1 minute. Add powdered sugar and beat on low for 2 minutes. Scrape down sides of bowl and add vanilla and milk. Beat on low until combined. Then beat on med-high for 4 minutes. Frosting should be light and fluffy. Lick the beaters. Yum!
